Hearty Lentil Soup: A Comforting and Nutritious Meal

This Hearty Lentil Soup is a comforting and nutritious meal that is perfect for chilly days. Made with lentils, vegetables, and spices, this soup is packed with protein, fiber, and vitamins. It's also vegan and gluten-free, making it a great option for those with dietary restrictions.


Ingredients:


- 1 cup dried green or brown lentils

- 1 onion, chopped

- 2 carrots, chopped

- 2 celery stalks, chopped

- 3 garlic cloves, minced

- 1 tsp ground cumin

- 1 tsp smoked paprika

- 1/2 tsp dried thyme

- 4 cups vegetable broth

- 1 can diced tomatoes (14 oz)

- Salt and pepper to taste

- Fresh parsley for garnish


Instructions:


1. Rinse the lentils in a fine mesh strainer and set aside.

2. In a large pot or Dutch oven, heat some oil over medium heat.

3. Add the onion, carrots, and celery and sauté until softened, about 5 minutes.

4. Add the garlic, cumin, smoked paprika, and thyme and cook for another minute.

5. Add the lentils, vegetable broth, and diced tomatoes to the pot.

6. Bring the soup to a boil, then reduce the heat to low and simmer for about 30 minutes or until the lentils are tender.

7. Season with salt and pepper to taste.

8. Serve hot with fresh parsley for garnish.
