One-Pot Chicken and Rice: A Simple and Delicious Meal

This One-Pot Chicken and Rice is a simple and delicious meal that is perfect for busy weeknights. Made with chicken, rice, vegetables, and spices, this dish is packed with flavor and nutrients. It's also easy to make and requires only one pot, making cleanup a breeze.


Ingredients:

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

- 1 red bell pepper, chopped

- 1 green bell pepper, chopped

Instructions:

1. In a large pot or Dutch oven, heat some oil over medium-high heat.

2. Add the chicken and cook until browned on all sides, about 5 minutes.

3. Add the onion and garlic and sauté until softened, about 3 minutes.

4. Add the rice, chicken broth, diced tomatoes (with their juice), red bell pepper, green bell pepper, cumin, smoked paprika, salt, and pepper to the pot.

5. Stir everything together until well combined.

6. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.

7. Simmer for about 20 minutes or until the rice is tender and the liquid has been absorbed.

8. Remove from heat and let sit for a few minutes before fluffing the rice with a fork.

9. Serve hot with fresh cilantro for garnish.
