Quick & Easy Veggie Omelette

Start your day right with this Quick & Easy Veggie Omelette! Packed with colorful vegetables and protein, this nutritious breakfast will keep you satisfied until lunch.


Ingredients:


  • 3 large eggs

  • 1/4 cup chopped bell peppers (red, yellow, and green)

  • 1/4 cup chopped tomatoes

  • 1/4 cup chopped onions

  • 1/4 cup chopped spinach

  • 1/4 cup shredded cheddar cheese

  • 1 tablespoon olive oil

  • Salt and pepper, to taste


Instructions:


  1. In a medium bowl, whisk the eggs until well combined. Season with salt and pepper.

  2. In a non-stick skillet, heat the olive oil over medium heat.

  3. Add the onions, bell peppers, and tomatoes to the skillet. Cook for 3-4 minutes until the vegetables are softened.

  4. Add the chopped spinach and cook for an additional 1-2 minutes.

  5. Pour the whisked eggs into the skillet, ensuring they cover the vegetables evenly

  6. Lower the heat to medium-low and let the omelette cook for about 4-5 minutes until the edges are set and the center is slightly runny.

  7. Sprinkle the shredded cheese on one half of the omelette.

  8. Carefully fold the omelette in half, covering the cheese. Cook for an additional 1-2 minutes, or until the cheese is melted and the omelette is cooked through.
