Ingredients:

- 1 cup quinoa

- 2 cups water

- 1 red bell pepper, chopped

- 1 yellow bell pepper, chopped

- 1 cucumber, chopped

- 1/2 red onion, chopped

- 1/4 cup fresh parsley, chopped

- 1/4 cup fresh mint, chopped

- 1/4 cup olive oil
